Hawthorn berries make an excellent vinegar with a flavour often compared to sherry vinegar (minus the air miles)
We use thousands of fresh, hand picked and local Hawthorn berries to make our Hawthorn wine which once matured we ferment again to vinegar.
This vinegar is aged to perfection before bottling in a natural and slow process that can take years.
Every bottle is a snapshot of a season past.
