The wild Cherries are the real star of the show here. Hand harvested in September they’ve simply been macerated in our high acidity Elderflower 10°
Using equal quantities of Cherries to Vinegar has resulted in a well balanced flavour and an acidity drop of 5%.
After infusing, the Cherries were pressed out and a little extra sweetness achieved by blending with a bittersweet Apple concentrate.
This is a live, unpasteurised and unfiltered vinegar.
